Easy Doughnuts



Just a quick post to share a recipe and some pictures with you. In honor of being in cooler weather, I decided to make a fall treat of apple cider and doughnuts for my family after dinner last night. They turned out really good and were a hit with the whole family.

The recipe is adapted from one I found at divinerecipes.com.

I would have used the recipe from the site, but my mom does not like nutmeg and we didn't have vegetable oil. Since I can't tell you how the original recipe tastes, I'll give you my version.

Doughnuts
Peanut Oil (This is simply the only oil I had on hand, but I've used it for doughnuts before and I like the way they turn out.)
2 cups Bisquick
2 Tbl sugar
1 tsp vanilla
1 egg
1/4 cup milk
1/4 tsp cinnamon




Sugar Coating
1/2 cup sugar
1 tsp cinnamon (I actually did not measure these at all. I'm pretty sure that my mixture had more than a tsp of cinnamon in it. It was probably closer to a tablespoon. Just make it how you like it. You could also use powdered sugar or a glaze of some kind. Be creative. Cinnamon sugar doughnuts are my favorite, so that's what I made.)

Pour 3 to 4 inches of oil into a deep-fat fryer. Heat to 375 degrees (I don't have a thermometer, but on my stove dial it was around 4 or medium low).

Mix Bisquick, sugar, vanilla, egg, milk, cinnamon and nutmeg until smooth. Smooth into ball on floured, cloth-covered board. Knead 10 times. Roll 1/4-inch thick.

Cut with floured doughnut cutter. (I don't have a doughnut cutter, so I used a small glass and shaped the hole with my fingers.


Slide doughnuts, a few at a time, into oil. Fry until golden, about 30 seconds on each side. (The doughnut should float on the top of the oil when you set it in. If it sinks and doesn't come right back it, it needs to get hotter. Be careful though, if you get the temp too high, the doughnuts will cook too fast on the outside, but will be raw in the middle.)


Drain on paper towels. Eat plain or use sugar coating.


I coated them by putting the sugar mixture in a bowl and tossing the doughnuts in it.
They are best served while they are still a bit hot. However, we had the leftovers this morning for breakfast, and they were still great. I just heated them in the microwave for about 15 seconds.

Once my kitchen is set up I think I am going to have to try some of your recipes... they just look sooo delish!!!
